Wood constantly varies its moisture content. Rust might be the result on steel parts. Cool idea though.
I have heard of people making false cold air returns in the basement to hide guns and other items. Also, if yo have the room and find an old furnace, you could put that in the basement next to an existing furnace with fake duct going to ceiling.
An old dehumidifier that’s gutted would be an excellent place to hide handguns or other valuables.

I like the idea, hiding in plain sight.
BUT ! As mentioned, i would stain / paint / do something to make the wood look not desirable.

Will not fly here in Denmark though, from .22 airguns and up a proper approved gun safe must be used.
You...can't...stain, paint, etc., the wood. That will give it away as...something.
Maybe sealing each drawers interior would be a good thing. Like as has been said, to help keep moisture out of the interior as best as possible. That and some desiccant bags.

Just let the wood age naturally. It will naturally darken in an uneven pattern.

The way I see it, it just needs some hidden locks...OR...are they already there ?

well if you have any weathering skill, you can get something new to look as something used and half rotten, model builders and others do that all the time.
I would also put a couple of loose boards on the top of it all, as that is probably what a person would feel up, and reaching for a loose bord, thats not loose, well should make some form of bells ring inside the persons ears.
