I'd eat a batch of those countryside birds in a heartbeat, as they eat a way better diet than their city-living counterparts. I've also read that pigeon is indistinguishable and as good as dove and similar game birds when cooked.We have not eaten any of the pigeon breasteses yet, haven't gotten past the image of these birds as
"filthy" that I grew up with. Haven't eaten starling either.
I'm sure some time I will try it, I ate groundhog, Elk heart and whitetail heart for the first time in the last year and really enjoyed all three so...

Coyotes have very thin skulls, head shots, one and done with almost anything. Got this from a vet interview so YMMV.
