Do these carbines need the Air Superiority power adjusters offered by AoA to function as a pistol, or can you simply take off the shoulder stock?

AOA would be better able to answer your question. My Atomic came with the power adjuster to use as a pistol. My Atomic will never be used as a pistol. If you buy an Atomic and find you need one you can have mine.
