Fox (or big reds) Squirrel

Also from Kentucky. Greys and Fox squirrels are both delicious.

Maybe greys are a little more tender on average, but neither is particularly tender unless you get a juvenile.

Trick is to quarter them up and then boil the meat for about 30 minutes before breading and frying. That makes em fall off the bone.
Hmmm, never heard of boiling them first. We usually fry them, and then roast/steam them in the oven for about 2 hours. Same result, fall off the bone. Then we use the drippings for gravy, yum.
 
I see CA has a Fox squirrel season , Here in KY i don't hear much about the big reds . Like they are to tough to eat or something ? When i was a kid we used to pass on the grays and only shoot the big reds . We would Filet the meat off and chop it very fine and make "burgers " for lunch .
@beerthief Fox squirrel meat is chewy to me in comparison to gray squirrels. I don’t particularly care for it. Bigger animals with more meat though.
