Go off what it says on the rifle, that is typically the rifles safe working pressure.
The bottles will typically go much higher than what is printed on them. This is due to the safety margin that is needed for such a high pressure vessel. You go higher than the pressure stated on the rifle you are more than likely going to damage the internals, and very likely not be covered under any kind of warranty.
Go with the 250 and go shoot the rifle.
