You can get custom grip sets left or right from Tilly's Gun stocks in the UK getting LH grips in this country is very hard UA doesn't have any. Yes they are very well made and yes you can use the hunter stock for target shooting but the FT stock may be better suited to you for that. Yes you can add other Aeron or third party accessories to the stock.

What is the difference between the hunting V the HFT rigs?

You can look at the pictures on Utah Air HFT the stock is more adjustable and offset and the hunting is more "traditional" with a straight thru design. I have both and like both.
