I know that Carp are full of bones and very few people keep to eat them, but you need to try smoking them. Gut and remove the scales, put foil in a pan and shape to pan, add some butter, Canola oil, salt, pepper, garlic, lemon juice, cover all of this with sliced white sweet onions and close the foil. I have a big all aluminum vertical smoker so I get the temp to 225 to 250 and place the pan on the top shelf and smoke until done. This is some good eating :p
