Benjamin New to pistol platform!

So my quest to buy a pcp platform for my 7yr old girl up to 12yr old girl and meet the ergonomic challenges of weight and length of a platform for them to hunt with. My quest has been a failure for most part ending with each gun being resold. My girls love to squirrel hunt and travel hunt with me to multiple county's and states to do so. I have picked up a P-ROD in .22cal and have found there is a whole community behind this line alone. No shock there because we where all drawn to the sport for some reason or another.
So my question and need for suggestions is the following. How do I squeeze out the most in accuracy department. How do most of it myself aka instructions or a website or linked resources information. Im a tool and die for a living so working with machines or on something is fun for me and my 7yr old.
Here's some pictures of my little one doing country girl stuff! She loves helping clean all the game we take in from deer, squirrel, rabbit.. Etc
And yes I'm that dad in life now that shows his kid to coworkers and his airgun nation family!

I don't have any experience with Prods, but a gun that I haven't really liked much myself, but would be ideally suited for young hunters is the Hatsan Jet 2. I bought mine back when Midway had a clearance sale on them. It's got a small pistol grip and a collapsible stock with an adjustable cheekpiece. It's also small, lightweight and puts out about 21 fpe, so it's more than powerful enough for squirrels and rabbits, but not too powerful.
 
I would spend some time seeing what pellets it likes best. The three I've owned all shot decent with Crosman CPHP, but really shine with H&N 14.66 with the 553 head size.

EDIT: I almost forgot, GOOD ON YOU for teaching your lovely daughter to enjoy the shooting sports and the great outdoors.
