Are you positive the O-ring you replaced was the correct size? For example, it is pretty easy to get a metric 2mm cross-section (0.078") mixed up with a -00x size (0.070").

Durometer (hardness) could be another complicating factor but I would rank that a distant second to the wrong size, particularly if it is hissing straight away. A too-soft O-ring would generally hold at first and then leak or pop once pressure built up above some level.

Lastly, a creeping symptom has nothing to do with O-rings. The source of creep is the valve seat, usually wear or damage to the plastic side of the seat. Either replace the seat or dress it flat and smooth with a wet sanding regimen. While you're in there, it's not a bad idea to check the metal side of the seat under magnification for a burr or roughness that could be damaging the plastic part.
