Rabbit Recipes

Hey Guys,
I took two rabbits last night. They are marinating in an Italian dressing at the moment. I've got a couple days to come up with a recipe. I'd like to make them into a slow cooked stew with carrots, potatoes and onion but I'm not sure about the broth. I don't want to use alcohol. How do you make the broth of your rabbit stew? Do you have an other favorite recipes?

I just chop an onion, melt a teaspoon of honey in hot water, put pieced rabbit and onion in crock pot. I add a couple crushed garlic cloves, a sprig of Rosemary, and a dash of olive oil, and about a teaspoon of deli mustard. Add enough water to cover the meat and cook on high for 2 hrs, then on low till the meat separates from the bone easily. I set the meat aside for deboning and put the liquid in a saucepan with some flour added to liquid to thicken it up. Boil the liquid for a while and pick the meat, add it to broth when the broth is as thick as you want it. Serve with mashed potatoes.
Save the bones and boil them for stock.

Not sure about putting the carrots and potatoes in the crock pot, haven't tried it that way. 
 
Use a soup to cook your stew in. I use cream of celery soup, brown the rabbit and add it all to the crock pot and cook for several hours and serve. I layer the veggies on top of the rabbit. If you want it done faster use an electric pressure cooker and cook it all for 30 minutes. I do squirrels that way because they are tough and the meat will be falling off the bone in 30 minutes.
