Squirrel Opener

How do you cook your meat? I've been debating putting some squirrel meat on my kamado smoker low and slow or perhaps braise it a bit - interested if you have any decent recipes.

I let them tenderize in the fridge for about a week and then give them a low simmer in bullion broth for 1.5-2 hours. Then I either toss them on the grill for a few mins with either BBQ sauce or I will brush them with olive oil and some salt, pepper, and garlic. Some times I will bread them and fry them. But it always starts with that simmering to get them tender. They come out just like chicken wings.
 
8 days later. Went with the good old brush and grill. After a 2 hour simmer, of course. Wonderfully tender. Dog got his cut after the simmer. He goes nuts when he gets a whiff of the squirrels after a hunt.
