All sources seem to point to the Veteran II having a max fill pressure of 300 bar, but the airtube says a max of 250 bar. I've only been filling it to 250 bar, but could someone shed some light on the discrepancy?

One would think if a manufacturer writes the max fill pressure on the gun, why would there ever be a question.

I wouldn't question what is labeled on the tube on the forums but rather contact Taipan themselves.
