So this is regarding the GK1 but am sure it apples to all Airguns. If I fill my gun to the states 5k and I go to a cold weather environment and the gun goes down to say 4600psi, should I bring it back up to 5k or just leave it where she sits? The same old apply to the bottle as well right?

You can fill back to 5k while in the cold. BUT when you get ready to take the gun back to a warm space, you need to lower pressure to be safe.
Temperature and pressure directly correlate. More temp = more pressure for a given volume of air (IE your tank).
